Zolt Kitchen (Kitchen Display System)
Strategic Objective: Data Retention for Business Intelligence.
Permanent KOT Analytics
Data Retention Policy
Unlike standard systems that delete data after a shift, Zolt Kitchen retains KOT (Kitchen Order Ticket) data indefinitely for historical analysis. This includes dish names, preparation durations, and station-specific bottlenecks.
Big Data Usage
This data is processed on AWS to provide merchants with 'Peak Hour' predictive analytics and menu engineering insights.
De-identification
While we store the food order and the time it took to cook, we do not associate this data with individual diner identities or payment cards within the kitchen environment.
System Reliability & Compliance
Operational Logging
Every 'Mark as Ready' action is timestamped to provide a complete audit trail for the merchant. This helps in resolving customer disputes regarding wait times.
Infrastructure Reliability
As part of the Techmen Infotech ecosystem, the KDS utilizes AWS high-availability zones to ensure that the kitchen remains operational even during regional internet outages (via local caching).
Universal Legal Clauses
Cross-Border Data Transfer

Data Breach Protocol
In the event of a data breach, Techmen Infotech will notify the Data Protection Board (India) or the Privacy Commissioner (Canada) and the affected users within 72 hours of verification.
